APPEARANCE: Round wheel with ivory paste marbled with lots of blue veining. Tan rind with white and grey molds.

FLAVOR: Sharp and intense, with an assertive aroma. The cheese is crumbly due to its aging.

HISTORY: Italy’s most famous blue cheese originated in the 10th century in the town of Gorgonzola, near Milan. A trade center, the town was inundated with milk twice a year as shepherds brought their cows to seasonal mountain pastures. Unwilling to let the milk go to waste, they began to make cheese and age it in caves. Gorgonzola Piccante obtained DOP status in 1955. The Leonardi family of IGOR has been making cheese in Novara for three generations and has won numerous international awards over the years.
