A complex, full-flavored, buttery Manchego aged a minimum of 14 months. The cheese comes in an elegant wooden crate. It is made by the Corcuera family, and like all of their Manchegos, from young to reserva, the standout characteristic of the cheese is the wonderful butteriness and well-rounded flavor of the sheep’s milk. We have worked with Quesos Corcuera for over 20 years, and their company spans three generations of the Corcuera family. It all started with Eusebio and Julia, then their sons Ramon and Carlos took over; their sister Carmen and her niece Patricia are currently in charge. From La Puebla de Montalban, a small town just 20 minutes from Toledo, they produce cheese from same day milk. They are dedicated to making the best cheese possible, so it is no surprise that they were instrumental in helping to create the DOP for Manchego in 1985. ORIGIN: La Puebla de Montalban, Castilla-La Mancha, Spain
AGING: 3 months
INGREDIENTS: Pasteurized Manchega sheep's milk, cheese cultures, rennet, salt, lysozyme (from egg white).
PACK SIZE: 6/2 lb. wheels
APPEARANCE: Approximately 2lb wheels with a zigzag rind. The pattern honors a time when the cheese was wrapped in sheets of woven esparto grass. The paste is straw yellow with few eyes.
FLAVOR: Brightly flavored, nuanced paste, with hints of toasted nuts, grass, and churned butter.
KEY POINTS: El Trigal® is more buttery than other Manchegos and is produced by a small family-owned company using same day milk.
SERVING RECS: Served traditionally with membrillo and Rioja, but can be shaved for any number of culinary uses.
