Our wedges are the life's work of the Leonardi family of IGOR, a four-generation dynasty in Novara who have perfected the balance between revered tradition and modern precision. They begin with rich, pasteurized Frisona cow's milk, introducing a bespoke strain of Penicillium gorgonzolae and aging the wheels for a minimum of three months.
