History
It is not every cheese that can claim the favor of both emperors and Enlightenment philosophers, but Roquefort is not every cheese. Dubbed the “King of Cheeses” by Diderot, its story is a blend of legend and law—from the shepherd who supposedly discovered it in the Combalou caves to its status as the very first food to receive a protected designation of origin (PDO) in 1925. This is the benchmark against which all other blue cheeses are judged. Our Président Société Roquefort is a direct link to this heritage. It is made exclusively from the raw milk of Lacaune sheep and aged in the very same natural, ventilated limestone caves in Roquefort-sur-Soulzon where the legend was born.
